The full selection of the MICHELIN Guide Guangzhou 2023 has been announced recently at the Ritz Carlton Hotel Guangzhou, presenting a total of 119 restaurants, including 3 Two MICHELIN Star, 16 One MICHELIN Star, 42 Bib Gourmand, and 58 MICHELIN-Selected food establishments. 16 restaurants in Liwan District are listed, providing authentic Cantonese cuisine and Xiguan taste.

Diners here unwind with a cup of tea freshly brewed by tea masters. The traditional garden, water features, exquisite woodwork and artisan Manchurian windows give it a serene feel. The food is, of course, no less impressive. Sunflower seed-fed chicken is delivered straight from the farm daily. Baked pigeon with lemongrass and salt is another proud creation of the chefs. Also try various poultry and meats in white marinade.

Apart from the river view and stunning murals, Hongtu Hall is prized for its exquisitely crafted dim sum ranging from the classic to novel creation, as well as velvety congee and juicy roast meat. Make sure to try their shrimp dumplings and shrimp shaomai. Tableside tea service is also a nice touch. The restaurant is always busy during opening hours and reservations are accepted for guests staying in the hotel only. Other customers have to join the queue.

Since opening in the 90s, Chuang Fa has been a popular place among locals who can’t seem to get enough of the kitchen's Cantonese home-style cooking, especially the double-boiled tonic soups. The signature “real-taste” chicken is free-range from Shunyi and is prized for its firm, flavoursome meat and silky, gelatinous skin. Large fried pork intestines with basil, and live seafood cooked-to-order are also excellent.

For over 50 years, Jian Ji (Liwan) has attracted a faithful following with not only E-fu noodles, but also freshly made raw and cooked egg noodles. The ladies working in the open kitchen show off their swift moves as these particular strands are notorious for their finicky cooking process. The flavorful broth made with dace, pork bones, shrimp roe and dried shrimp matches the noodles perfectly.

Wen Ji Yixinji joint expanded in 2020, adding a new dining room across from the original shop. Its signature Yixin chicken remains the key draw – juicy, silky flesh, springy skin and flavoursome down to the bone. Both the founder and kitchen team used to work for the now-defunct Qingping Restaurant, and the namesake bird is derived from the legendary Qingping chicken dish. To top it off, try their braised pork ribs with red dates, or chicken feet and lotus root soup.

Tucked away in an alley, this two-storey, no-frills joint has been in business for over 30 years. You're not here for the ambience, but for the steamed chicken – only free-range pullets before they lay their first egg are used because of their springy skin, oily richness, silky flesh and robust flavour. Boiled chicken intestines, stir-fried ribbon rice noodles and creamy congee are also sound reasons to visit.

Duck egg noodles are kneaded with a traditional bamboo pole for a springy texture, before being blanched and tossed in shrimp roe, or in a broth made with dried plaice, pork bones and dried shrimp. Apart from the classic shrimp wonton, there is also the crab roe variety. Don’t miss the beef offal soup, fried savoury dough, beef brisket and pork intestines.

Enduring the test of time and loved by locals since 1988, this operation started out as an ‘ice parlour’ serving cold drinks and light meals. These days the menu features no-frills, home-style fare, including the signature steamed Qingyuan chicken, spring onion chicken, soy-marinated goose and deep-fried pork rolls. The made-to-order swamp eel claypot rice boasts a crispy crust and an oniony aroma. Seafood lovers should ask about the catch of the day.

Generously adorned with glass work and art, this graceful restaurant befits the famous hotel in which it is nestled. All tables have gorgeous river views that jazz up the dining experience. The menu features the best from all over China, with an emphasis on Huaiyang and Sichuan specialities, such as sunflower seed-fed chicken in rice wine sauce and scalded shredded eel in oil. Oenophiles are bound to be thrilled by the varied wine selection.

The shop next door offers preservative-free snacks made in-house, such as baked pork cake.

Focusing on goose cooked in a myriad of ways, E Gong Cun (Liwan) is so specialized that it even serves its own farm-raised Magang breed, known to be one of the best in the province. The must-try E Gong soup is an herbal tonic simmered for up to four hours with a 120-day-old male goose. Additive-free hefen rice noodles are handmade on site. Wu Cai Ji is made to resemble the old days and, with exhibits fit for a museum, it chronicles both the history of the shop and noodle making itself. Educational displays include an ancient well, hand-powered noodle making tools from the Qing Dynasty and their first electric noodle-maker circa 1985. Apart from the famous soup wontons and deep-fried wontons with sweet and sour dip, try their noodle soup with braised beef brisket or pork trotters.

Yuan Ji has a very simple menu – congee and rice rolls so well-made that regulars have been coming back for the past 30-plus years. In the open kitchen, piping-hot and creamy congee is poured on ingredients of your choice. Rice batter is steamed into paper-thin, fluffy and soft rolls with your favourite filling such as dried shrimp, beef or pork liver. It is basically a self-service joint, but diners don’t mind helping themselves at all.

Situated in a popular district for late night supper, Tang Shi Meishi is open well into the dark hours and always jammed with hungry diners. The signature Taishan swamp eel rice comes in two sizes, both with generous portions of eel despite the humble price tags. The fish is flavoursome; the chewy rice grains are easily separated and dressed evenly with sauces. Claypot dishes and home-style stir-fries are also worth a try.

Time is of the essence when it comes to cooking claypot rice. In Chao Ji Claypot Rice (Liwan), both the rice and soups are made to order, so expect to wait for at least 15-20 minutes, longer at peak hours. The rice is perfectly cooked, soft but toothsome with a crispy golden crust. Choose from an array of toppings: pork liver, chicken, pork patty, preserved pork and sausage, raw or fried eggs…
